Meatless Monday: Spinach & Feta Quiche

I’ve heard that some real men do eat quiche, but my husband happens to belong to the I’d-rather-not-have-to-eat-egg-pie-for-dinner camp.

We actually have a quiche that we save for nights when Daddy has to work, but I usually serve it up at least once during Lent regardless because it’s an easy and cheap meal to make, and my husband is always a good sport.

So for today’s Meatless Monday post (the last one of Lent – can you believe it?), here’s our recipe for what we’ve come to refer to as Daddy On-Call Quiche. My girls love feta and spinach (a little weird, I know, but I’m not going to complain) and gobble up this quiche like it’s real pie.

Note: This would also make a delicious dish for an Easter brunch. Enjoy!
